FOOD INNOVATION TOUR 2026

Food Frontier’s International Food Innovation Tour returns in 2026 with an immersive, multi-city experience across Northern Italy—one of the world’s most dynamic and influential food regions. Designed for leaders across agriculture, food, health, policy, and economic development, this year’s program explores how food systems can drive regional identity, economic growth, workforce development, and community well-being.

Over five days, delegates will engage directly with global thought leaders, producers, policymakers, and innovators shaping the future of food—from heritage-driven production systems to cutting-edge research and sustainability models.

This year’s journey follows a deliberate arc—moving from value creation and brand identity, through workforce and production systems, to governance, innovation, and global food policy.

Each stop offers a distinct lens into how regions leverage food as an economic engine and cultural asset, while addressing critical challenges around health, sustainability, and equity.

  • The Food Frontier Innovation Tour is intentionally designed to go beyond traditional study missions. Through a mix of:

    • Behind-the-scenes site visits

    • Shared meals and cultural experiences

Food Frontier Innovation tours bring impressive and immersive global views to food ecosystems. Alongside the learning - food, wine, and culture are critical to how we shape the program. Each day brings one-of-a-kind place-based experiences. All lodging, transportation, meals and drinks when paired with the meal are curated and included.


ParmA

September 21 
Food Identity, Workforce & Innovation

Known as Italy’s “Food Valley,” Parma offers a powerful case study in aligning food heritage with modern workforce systems and innovation ecosystems.

Sessions and site visits will highlight:

  • Workforce development pipelines supporting food production and manufacturing

  • The role of consortia in maintaining quality and competitiveness

  • Innovation across processing, packaging, and distribution


Bologna

September 22 
Systems, Governance & Economic Development

In Bologna, the focus shifts to the systems and policies that enable a thriving, equitable food economy. As a hub for cooperative business models and regional governance, Bologna provides insight into how public, private, and academic sectors collaborate to scale impact.

Key themes include:

  • Cooperative and cluster-based economic models

  • Urban food policy and governance structures

  • Integration of food systems into broader economic development strategies


Modena

September 23 
Value Creation, Branding & Regional Identity

The program begins in Modena, a global benchmark for premium food branding and value-added production. From Parmigiano Reggiano to traditional balsamic vinegar, Modena exemplifies how place-based identity, quality standards, and storytelling can elevate local products to international markets.

Delegates will explore:

  • Protected designation systems (DOP/IGP) and their economic impact

  • The intersection of tradition, innovation, and global brand positioning

  • Culinary tourism as a driver of regional development


pollenzo

September 24 
Global Food Systems, Sustainability & Health

Home to the University of Gastronomic Sciences and the Slow Food movement, Pollenzo offers a global perspective on the future of food. This final program day explores the intersection of food, health, sustainability, and culture.

Delegates will engage with:

  • Food as medicine and nutrition-driven systems

  • Sustainable agriculture and biodiversity

  • Global food policy and the Slow Food philosophy


Optional Extension - Turin – Terra Madre Salone del Gusto

September 25-28 
Global Convening on Food & Sustainability

Participants may choose to continue on to Turin for Terra Madre Salone del Gusto, the world’s leading gathering of food producers, activists, chefs, and policymakers advancing sustainable and equitable food systems. Terra Madre Americas comes back to Sacramento, Ca in 2027 and to see where it started and what we can continue to build will be a special moment. For those staying, we will have a welcome dinner on Friday night before the festival but please note the rest of your tour is on your own to discover and experience Terra Madre. We will have DIY guidebooks from Sacramento experts 365,000 people come for the weekend! Visit Sacramento will have a room block for those staying in Turin.

Experiencing Terra Madre is an optional extension and is not included in the Food Innovation Tour program. The Innovation Tour concludes in Turin, with one night of accommodations provided on Thursday, September 24. Participants who wish to extend their stay are responsible for arranging any additional lodging.

    Fueled by a passion for connecting brands with their audience, Meghan specializes in the powerful art of storytelling combined with design that resonates and inspires the food, beverage, cannabis, and agriculture sectors. She is also a passionate advocate for community, policy, and young entrepreneurs.

  • Co-Founder of Food Frontier, Owner/Executive Chef of Canon, Franquette, Cantina Pedregal

    The Michelin-recognized and 2018 Tower Bridge Dinner chef began his career in Sacramento at 16 years old. After receiving his first Micheline start at SolBar in Calistoga, Brad returned to Sacramento opening opening a series of restaurants over the last 7 years. In 2020, Brad, alongside his two co-founders, created Family Meal Sacramento, a philanthropic program focused on food insecurity that has served more than 2 million meals to those in need in the Sacramento Region.

  • Co-Founder of Food Frontier, Assistant Director for Nutrition Services for Sacramento City Unified School District

    With 13+ years in federal child nutrition programs, Kelsey is a leader in child nutrition and food systems development. Starting at the California Department of Education during the Healthy Hunger Free Kids Act implementation, she developed curriculum and trained food service directors on new regulations. Since joining Sacramento City Unified School District in 2015, her expertise spans program management, grant acquisition, policy implementation, and strategic communications. Kelsey has built relationships with farmers, distributors, community partners, and government agencies while maintaining meticulous oversight of compliance with federal child nutrition regulations.

  • Christine Ault Communications

    With over three decades shaping brands, communities, and public narratives, Christine is a trusted communications strategist deeply rooted in Sacramento’s civic and business landscape. She has led high-impact work across public agencies, nonprofits, and private industry—specializing in storytelling, place-making, and initiatives that drive economic growth and community identity.

    A connector at her core, Christine brings together leaders, ideas, and opportunities to move regions forward. From launching grassroots efforts like Sacramento’s Brandathon and Dîner en Blanc to advising major regional initiatives such as Next Economy, California Mobility Center and Food Frontier's Innovation Tour, her work consistently centers on building stronger, more vibrant communities.

    Thami, with his international background (German citizen - South African offsprings), has lived in Italy for the past forty years cultivating his passion for the Italian lifestyle: “la bella vita (the good life)”. Where slow food & fine wine culture blends with tourism and the spirit of hospitality.
